Saffron spice

Saffron spice is made of dried Crocus sativus L. stigmas.

Each saffron flower has a single stigma divided into three filaments which are held together by a small portion of orange-coloured stigma. Once the saffron flowers are collected and the stigmas are removed from the flower, they suffer a dehydration process which reduces their weight to 20%. This process converts the stigmas in saffron spice.

This spice is mainly used in cooking as a seasoning and colouring agent and it has been the most expensive spice during decades.
